Mix just until everything comes together, taking care not to overwork the meat so the meatballs stay tender. If the mixture feels dry, add a little more broth or water until it is moist and easy to shape. Form into small meatballs, about the size of a golf ball or slightly smaller, and arrange them on the prepared baking sheet. Bake for 15–18 minutes, or until cooked through. Ingredients

  • 1 lb ground chicken or turkey
  • 14 Cup breadcrumbs or 1 slice soft bread, torn
  • 1 egg
  • 2 tbsp chicken broth or water 2-3 tbsp
  • 1 tbsp olive oil 1-2 Tbsp (optional)
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Chopped fresh herbs such as basil, parsley, dill or cilantro
  • Salt & pepper

Directions

  1. Preheat oven to 375°F. Line a baking sheet with parchment paper.
  2. Mix all ingredients, herbs, salt & pepper gently (don’t overwork). If the mixture feels dry, add 1- 2 T broth or water, or more if needed. 
  3. Form small meatballs (golf ball size or smaller) and place on a parchment-lined baking sheet.
  4. Bake for 15-18 minutes.
