Creamy White Bean & Chicken Stew

A comforting, protein-rich stew with creamy white beans, tender chicken, and a touch of lemon to lift the whole bowl.

A warm, comforting stew with tender chicken, creamy white beans, and a bright touch of lemon. This nourishing one-pot meal brings together satisfying protein, hearty vegetables, and fragrant herbs for a cozy dish that feels both wholesome and easy to enjoy.

How This Dish Comes Together
This stew begins with onion, carrots, and celery gently sautéed in olive oil until softened and fragrant. Garlic, rosemary, and thyme add a comforting, Mediterranean-inspired aroma, creating a flavorful foundation for the dish. Tender shredded chicken and creamy cannellini beans are stirred in with low-sodium chicken broth, allowing everything to simmer together as the flavors meld. A splash of non-dairy milk adds a smooth, creamy finish, while fresh lemon zest brightens each spoonful. For an extra touch of color and nourishment, baby spinach can be folded in just before serving. Enjoy it on its own for a satisfying meal, or add croutons for extra texture and calories when additional energy is needed.

Why This Dish Is Supportive for Pancreatic Cancer Patients
This Creamy White Bean & Chicken Stew offers a comforting combination of protein, carbohydrates, and nourishing fats to help support everyday nutrition during pancreatic cancer treatment and recovery. With approximately 32 grams of protein per serving, tender chicken provides a substantial source of protein to help maintain muscle and strength, while the white beans contribute additional protein, carbohydrates, and fiber. Olive oil adds energy, and the warm broth helps contribute to daily fluid intake. The gentle herbs and bright lemon bring plenty of flavor without relying on heavy cream or excess salt. Because appetite, digestion, and tolerance for fiber can vary during treatment, the recipe can be adapted to individual needs: blending the beans or replacing them with peeled, diced potatoes may create a gentler texture for some people, while a little extra olive oil or croutons can boost calories when weight maintenance is a concern. Personal tolerance varies, so adjust ingredients and portions to what feels comfortable.
