Ingredients

  • 6 eggs
  • 2 cups (10 oz) refrigerated hash brown potatoes (not frozen, or thawed fully)
  • 12 small onion (very thinly sliced, optional)
  • salt
  • olive oil (optional)
  • chopped parsley (optional)

Directions

  1. Heat oven to 425°F. Line a baking sheet with parchment paper and add the potatoes in an even layer. Sprinkle with salt as desired. Bake for about 20 minutes until potatoes have started to brown, turning halfway through.
  2. Meanwhile, whisk eggs with a pinch of salt. Line a baking dish (a loaf pan works great) with parchment paper.
  3. Remove potatoes from oven and cool slightly. Reduce the oven temperature to 350°F.
  4. Fold potatoes into whisked eggs and pour back into the baking dish lined with parchment paper.
  5. Place the baking dish in the oven and bake until set, about 15 minutes. Sprinkle with olive oil and chopped parsley before serving.

Tips

For an even gentler option, omit the onion.
