Ingredients

  • 1 lb baby potatoes, halved
  • 2 zucchinis, sliced
  • 1 pint cherry tomatoes
  • 8 boneless skinless chicken thighs or 4 chicken breasts
  • 2 tbsp olive oil
  • Dijon Honey Oregano Dressing
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 12 lemon, juiced
  • Salt & pepper to taste
  • Optional toppings: fresh parsley or cilantro, lemon zest, kalamata or green olives

Directions

  1. Preheat oven to 425°F.
  2. Toss potatoes with 1 tbsp olive oil and salt. Roast alone for 15-25 minutes, depending on desired crispness.
  3. Whisk dressing ingredients.
  4. Toss zucchini, tomatoes, and chicken in oregano dressing. Add vegetables and chicken to the sheet pan, brushing on any excess dressing from the bowl.
  5. Roast 20–25 minutes until chicken reaches 165°F and vegetables are caramelized.
  6. Finish with any of the optional toppings – fresh parsley or cilantro, Kalamata or green olives, and extra lemon zest.
