Quick and Easy to Make Snacks

Having nutrient-dense snacks prepared and readily available can help pancreatic cancer patients maintain consistent calorie and protein intake throughout the day, supporting energy levels, weight maintenance, and overall nourishment.

The beauty of these recipes lies in their simplicity and accessibility, making them easy to incorporate into daily life without extensive preparation.

The Roasted Chickpea Snack starts by thoroughly draining and drying the chickpeas before tossing them with warming spices. Once roasted, they develop a crisp texture that makes them both satisfying and portable. Paired with fruit and nuts, they make a balanced snack rich in protein, fiber, and healthy fats.

The Chocolate Fix is simply assembled by combining dark chocolate chips, roasted walnuts, and optional dried fruit for a quick, no-cook snack that feels indulgent yet delivers meaningful nutrition.

Each of these recipes is intentionally simple, requiring minimal preparation while still delivering substantial nutritional value.

  • Roasted chickpeas, 6-8 unsalted almonds (or walnuts, pistachios), piece of fruit: Drain 1 can chickpeas, dry drained chickpeas with a paper towel. Toss with spices of your choice, such as paprika, cumin, and turmeric (at least half a teaspoon of each, to your preference). Spread on a parchment-lined baking sheet and roast 15 minutes at 425°F. Enjoy with fruit and whole unsalted nuts of your choice – mix them in or have them separately.
