Ingredients

  • 2 cups fresh corn kernels (about 3 ears) or thawed, drained frozen corn
  • 1 12 cups cherry tomatoes, halved
  • 1 avocado, diced
  • 14 red onion, finely diced
  • 1 cup canned white beans, rinsed
  • 2 cups shredded rotisserie or roasted chicken
  • 2 tbsp olive oil
  • Juice of 1 lime or lemon
  • 1 tbsp red wine vinegar
  • Salt & pepper to taste
  • 2 tbsp chopped cilantro or parsley

Directions

  1.     Combine corn, tomatoes, avocado, onion, beans, and chicken in a large bowl.
  2.     Whisk olive oil, citrus juice, salt, and pepper.
  3.     Toss gently to combine.
  4.     Add herbs just before serving.
