Ingredients
- 1 Tbsp olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 carrot, grated
- 1 zucchini, diced
- 1 lb. ground chicken or beef
- 3⁄4 cup dried lentils or 1.5 cups cooked lentils (can use canned)
- 1⁄2 tsp cumin
- 1⁄2 tsp smoked paprika
- 1⁄2 tsp cinnamon
- 1 Tbsp tomato paste
- 1⁄2 cup vegetable broth
- salt
- pepper
- parsley
- Topping
- 2 yukon gold potatoes (or sweet potatoes)
- 2 Tbsp olive oil
- splash oat milk or water
- salt

Directions
- Boil potatoes in cool water with salt.
- Coat a pan with olive oil and add onion, then garlic, carrot, and zucchini, and season with salt and pepper.
- Add ground chicken (or beef) and sauce until cooked through.
